Skinless Longganisa Making

Agriculture doesn’t only centralize its principles in crop production only hence animal production and processing of their products are still involved. That’s why we made some product which enhanced our ability to innovate or add some value to the product. This exercise can also help to have something to earn for a living. 
To start making the product, here are some important ingredients and procedures.

INGREDIENTS


1 kg ground pork (50% lean) (50% fat)
            3 head garlic
            2 onion, finely chopped
            4 tbsp vinegar
            4 tbsp soy paste
            ¼ tsp. Oyster sauce
            ¼ tsp. Chilli sauce/powder
            ½ cup brown sugar
            2 tsp. Sea salt or Pangasinan salt
            2 tsp. Ground black pepper
            2 eggs beaten/unbeaten
            2 tbsp plain bread crumbs/baking      powder
            Wax paper (skinless longganisa)


           
PROCEDURE
1.      Combine all ingredients except egg and bread crumbs/baking powder.
2.      Marinate for at least an hour or overnight.
3.      Add the egg and bread crumbs/baking powder.
4.      Mix well.
5.      Roll a small amount of the pork mixture in a wax paper.
6.      Place in the chiller for at least 24 hrs. Or at most 3 days for proper absorption of the different spices added in the mixture.
7.      Heat oil in a wok or frying pan.
8.      Fry in batches in the hot oil until fully cooked.
9.      Serve with egg, garlic fried rice and vinegar.
